Refried Beans

 

My toddler has gotten to be a picky eater. Yep, I’m struggling to get the right food into her or pretty much any food at all these days though she loves milk which she refers to as “milkie”. Maybe I should try the "milkie" diet. it seems to work for her. 

She also has an affinity for pouches, crackers, yogurt (sometimes) and cheese. But I’ve figured out her favorite cuisine: Mexican. This girl will lap up some guacamole but what she really puts away is refried beans and rice…but most definitely refried beans. She’ll take a big bite and say, “Mmmm, that good.”

Come to think of it, she loves beans in general. I made her a quesadilla this weekend that had beans in it and she opened them up and picked all the beans out. It is pretty funny to see her gobble down that Mexican food. Other food she seems to really like is miso soup, hummus and chili. Odd, I know! Does your toddler like any food that surprises you?

A girl after my own heart. I love Mexican food :) I'll have to make her some of my enchiladas! Reese certainly has preferences now that she's older. One of her new favorites is hummus with banana chips. Strange huh?

My son has always liked cauliflower. It started when I mashed cauliflower in place of potatoes with a meal, and he really loved it. Since then, any time I've offered it, he's eaten it well. He's 3 now, and still loves just about any vegetable. He also loves hummus!

My son loves chili. He loves it on fries and when I cut up hotdogs into bite size pieces, he always asks for chili on them. He also likes onions. If I give him sandwich he wants onions on it. He will actually pick the onions out and eat them first and then the rest of the food I made with them.
