Healthy Lunches for Pregos

I wouldn't say I'm the healthiest eater but I've been trying to be better while pregnant and the one area where I'm really struggling is lunch. I know we're told not to eat lunch meat during pregnancy or if you do to heat it up and I've actually had a lot of sandwiches but I'm looking for some other alternatives as I'd like to try work in something healthier for my mid-day meal. I'm never been a big salad eater but I wouldn't mind eating one. The problem there is that I'm lazy. I work at home and care for Elle as well so working in the time to wash the lettuce, figure out the protein, etc. doesn't appeal to me and most days the thought of a salad doesn't either. I've made grilled cheeses but they don't seem very healthy as to working in veggies. Grrr!

Anyone have any filling, healthy and easy lunch suggestions they prepared/enjoyed during pregnancy?

I'm pregnant and have been stressing about the same thing.

I'm hoping to try some cucumber sandwiches with veggie (or regular) cream cheese this week and ... I've been doing a lot of (organic!) spaghetti-o's and grilled cheese sammys! Oh man, sooo.. not that healthy.

Today though, my husband and I are working from home and he made us Pork Chops on the grill! Soooo that was a treat.

I've also had a few black bean chipotle burgers from the organic aisle - those are delicious. And hopefully healthy. Good luck, mama!

I'm in the same boat! I have precious few moments to myself during my son's naptime, so I don't want to spend the whole time preparing a big complicated lunch for myself. I do eat sandwiches on occasion - for one, my OB told me that lunch meats in sealed containers are ok and don't pose a listeria risk, and secondly, sometimes I make a sandwich out of rotisserie chicken, etc. But one of my favorite meals recently has been to do a cold salad. I've tried doing a quinoa salad with feta, grape tomatoes, red peppers, and a vinaigrette, and I've also done a pasta salad with orzo, arugula, goat cheese and white beans. I make a big batch and then I can have it for a few days. It's also good to pair with some soup. I buy a quart from Whole Foods and it's good for about three small bowls - turkish lentil is my favorite. That is about as balanced as I'm going to get these days!

I rotate between egg salad sandwiches and chicken salad sandwiches. I drive a lot so I need something I can easily eat on the go. A sandwich and lots of fruit are my go-to lunches. It's boring but filling and not horrible.
